A Tasty Recipe

Recipe by Mitch Madoff, Whole Foods Market, NYC Commissary/Deli. This is Whole Foods Market, New York City best selling salad.

Forbidden Black Rice Salad

2 cups Organic Forbidden Rice or Forbidden Rice
3 1/2 cups water
2 tablespoons Tamari
3 tablespoons Sesame Oil
1 pound roasted diced sweet potatoes
3/4 cup diced red peppers
3/4 cup diced yellow peppers
1/2 bunch sliced scallions

Instructions:

Bring rice, water and pinch of salt to a quick bowl, cover and lower heat to a simmer for 30 minutes. Let rice sit while you whisk together sesame oil and tamari. While rice is still warm toss in the sesame oil and tamari mixture. Let cool, then add sweet potatoes, red peppers, yellow peppers, scallions, and salt, pepper to taste.

Madagascar Pink Rice is grown by households of the Koloharena Cooperative of Amparafaravola using a more sustainable set of practices called the System of Rice Intensification (SRI). SRI enables small family farmers to harvest more rice using less water, seed, land and no chemicals. Lake Alaotra's marshy shores are home to the critically endangered Alaotran Gentle Lemur. It is hoped that SRI will help reduce degradation of the lemur's dwindling habitat by making existing land more productive without the need for polluting chemicals.

Mekong Flower is chiefly grown on small family plots by households belonging to the Damrei Romeal Rice Cooperatives in Takeo, a province dominated by rice fields and sugar palm trees. Cooperative members are using a set of growing methods, called the System of Rice Intensification (SRI), which enable smallholder farmers to harvest more rice from their traditional varieties using less water, seed, land and no chemicals. Researchers have found that the major aromatic compound in rice is increased in response to water stress. With SRI, farmers drain their paddies periodically, which may explain why Cambodian consumers are saying that SRI-grown 'Phka Malis' is more aromatic and better tasting.

Volcano Rice is grown by a cooperative of Tasikmalaya family farmers using the System of Rice Intensification. With SRI they are able to increase their production and conserve their local rice biodiversity using less water, seed, land and no agrochemicals. The cooperative is one of the first in Indonesia to get the rice it produces certified as both and fair trade. In fact, it is the first rice to be imported to the US that qualifies for labeling as "Fair for Life." The standards for this certification, set by IMO [Institute for Marketecology], are perhaps the most stringent in the industry encompassing many social and environmental criteria as well the price premiums most people associate with fair trade. Due in large part to the benefits of the SRI growing methodology, the production and processing of the Volcano Rice surpassed the minimum required standards of IMO.
